Los Angeles County has one of the most diverse food scenes I’ve ever come across. This is a place where you can find authentic Filipino, Thai, Burmese and Mexican food, just to name a few. Recently, my fiancé and I paid a visit to Panxa Cocina in Long Beach.

This is a modern eatery with a love for Mexican food and a passion for supporting locally sourced goods. You’ll find trendy brunch bites, like crème brûlée French toast, and traditional bites with a twist, like Panxa’s Blue Corn Pancakes. We haven’t been to brunch there yet, but we did enjoy dinner.

We tried the Fry Bread Taco, and as a burger fiend, I had to give the Green Chile Panxa Burger a try. I must say neither disappointed. They were such different dishes than we’d ever had before. This was our first time having fry bread in any form, and it was an absolute delight. You can tell the quality of the components of the food: The chicken was exceptionally juicy, and everything else was perfectly seasoned. The burger was a monster — I regretted getting it because it was so massive, but it was delicious.
