Plastic bottles have been abolished and guests are served their choice of still or sparkling from glass bottles. An all-vegan dinner menu at the resort’s Windsong Restaurant features delicious choices such as tempura cauliflower bites, pan-seared tofu, vegetable stroganoff and grilled cinnamon pineapple.
The resort itself is comprised of 26 tranquil villas, all exuding traditional Caribbean appeal and offering a host of green features. Among them: All hot water is heated via solar energy, and lighting is supplied by energy-efficient LED fixtures. The property has its own on-site water treatment system, and recycled water is used for irrigation. Fruits and vegetables are sourced from local producers when available, and used kitchen oils are collected and repurposed to heat laundry water. Additionally, grass cuttings are mulched and composted on the property’s grounds, and kitchen waste provides meals to the pigs on local farms.
If you’ve pointed your compass toward Costa Rica, Las Catalinas is a destination village that’s car-free and committed to green initiatives. A robust composting program is part of that, as well as nature-themed immersions featuring horses and chickens. The guided, two- hour Las Catalinas’ La Estancia Equine Experience takes guests via horseback though tropical dry forests to the beach along the seashore. Along the way, guests have the opportunity to learn about Las Catalinas’ Collective Impact and its efforts in the realm of climate resistance, regenerative agriculture and regenerative tourism. The equine experience also includes refreshments and a visit to a chicken coop.

Come Face-to-Face with Mountain Gorillas on a Trek in Uganda
Not a word was spoken as I settled into a cozy spot on the outdoor terrace just outside the main lodge at Volcanoes Bwindi Lodge in Uganda. The air was so still the ice in my single malt seemed to echo off the forest in the distance as it clanked against the glass. I sat among a handful of fellow adventurers, each sitting silently beneath the night sky for one collective goal. Moments earlier, we learned a troop of mountain gorillas had made their way down the mountain near our lodge, and we left our meals to instead sit in eager anticipation of hearing the guttural grunts of the primates below. The chills on my arms never left me that night, even as I made my way up a stone pathway to my personal banda (guestroom). Thankfully, sleep came quickly for me that night as I drifted into dreams of what my next day would bring.
